Wheat Berries: Health Benefits and a Recipe

Wheat Berry Recipe

I’m not going to lie, I’m on the way back to the kitchen to get a second bowl of this before continuing on…

Ingredients:

  • wheat berries (aka wheatberries)
  • carrots
  • peas
  • green beans
  • corn
  • Italian parsley
  • nutritional yeast
  • salt
  • black pepper
  • rosemary
  • lovage (powder)

How to Prepare:

  • soak the wheat berries for one day (or so);
  • cook the wheat berries in boiling water for 1-2 hours (wheat berries are still quite firm when done but are soft enough that they are no problem to chew);
  • prepare an assortment of veggies (e.g. carrots, green beans, peas, corn, green parsley) in whatever shapes and sizes you prefer, mix them in with some of the wheat berries (recommend about 50% veggies, 50% wheat berries), and cook a little longer (~5-10 minutes);
  • add in the spices (e.g. rosemary, black pepper, salt, lovage, and nutritional yeast) to taste;
  • enjoy your meal!
